Why do we refer to African Americans as African Americans and not Caucations as European Americans?

Because people of European decent aren't allowed to own ethnicity or heritage, it's thought of as racism when they do. Not necessarily. We refer to Russians as 'white' and much of Russia is on the continent of Asia.
We are allowing a preacher, Jessy Jackson, to define race as a continent. Africa has have several races including Caucasians for thousands of years. At least Europe only have one race. Asia isn't a single race either. The together concept of race is pretty stupid since the differences are superficial but if they want to harp on it, they should at least do it in a coherent manner. Because we tend to refer to Caucasians by their specific ancestry --- e.g. Polish-Americans, German-Americans, Irish-Americans. As the ancestry of much of the African-American community was forcibly transported here with no transcription of their specific ethnicity. we are forced to group all of Africa together.

I think that we should just drop all of the hyphens and label and just call each other Americans. If you are white and come from South Africa to America what are you?

It's actually spelled "Caucasian," and the question you should be asking is why "whites" are even referred to Caucasians at adjectives - the Caucasus, a region in is between Europe and Asia and home to Armenia, Georgia, Azerbaijan, and Southern Russia. Most of its inhabitants are of Arabic descent, and have darker pigmenting of the skin - they are in fact closer, in looks, to Middle Easterners or Asians. Being of Russian/Eastern European heritage, when my family came here when I be a child, my mother was insulted by the fact that whites had to check the "Caucasian" box on most prescribed documents because the countries that comprise the Caucasus are often in ethnic or territory-related conflict with Russia. I enjoy many Armenian friends who don't really understand it, either, since they're if truth be told Caucasian and not normally considered "white" because of their darker skin.
